  • 1 bunch bunch radishes trimmed and halved or quartered if large
  • 2 tbsp olive oil good quality for flavor and crispiness
  • 1 tsp salt sea salt flakes are nice for texture
  • 0.5 tsp black pepper freshly cracked
  • 1 clove garlic optional, minced
  • 0.5 cup Parmesan cheese freshly grated
  • Zest of 1 lemon lemon for brightening after roasting

Method
 

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper to keep things tidy.
  2. Wash the radishes thoroughly, then trim the tops and tails. If they're large, cut them in halves or quarters to ensure even roasting.
  3. In a mixing bowl, toss the radishes with olive oil, salt, black pepper, and minced garlic if using. Make sure each piece is evenly coated.
  4. Spread the radishes out in a single layer on your prepared baking sheet, giving them space to roast evenly without crowding.
  5. Roast in the oven for about 20-25 minutes, shaking the pan or flipping the radishes halfway through. They should be golden, slightly shriveled, and fragrant with a nutty aroma.
  6. Once the radishes are tender and beautifully caramelized at the edges, remove the baking sheet from the oven.
  7. Immediately sprinkle the hot radishes with freshly grated Parmesan cheese, allowing it to melt slightly into the warm surface for a crispy, cheesy crust.
  8. Finish by zesting a lemon over the top for a fresh, citrusy brightness that balances the richness of the cheese and sweetness of the roasted radishes.
  9. Let the radishes rest for 2-3 minutes to set the flavors, then serve warm, enjoying their tender interior and crispy cheesy topping.

Notes

For a vegan variation, skip the Parmesan or substitute with nutritional yeast or a plant-based cheese. To add more flavor, sprinkle with crushed red pepper flakes before roasting.
