- Gather your ingredients: almond butter, honey, oats, and sea salt. In a small mixing bowl, pour in the almond butter.
- Add the honey to the almond butter and stir well until the mixture is smooth, shiny, and slightly sticky. This will take about 30 seconds to combine thoroughly.
- Sprinkle in the sea salt and stir again, tasting to balance the flavors if desired.
- Pour in the rolled oats and fold them into the wet mixture using a spatula or spoon. Continue until everything is evenly coated and the mixture becomes thick and slightly sticky.
- If you'd like to add chopped nuts or chocolate chips, gently fold them into the mixture now for extra texture and flavor.
- Use a tablespoon to scoop out portions of the mixture and roll them between your palms to form small balls, about 1 inch in diameter. Place each ball on your lined baking sheet.
- Once all the bites are formed, place the tray in the refrigerator. Chill for at least 30 minutes until they are firm and set.
- After chilling, remove the bites from the fridge. They are ready to serve, with a chewy inside and a slight crunch on the outside. Store leftovers in an airtight container in the fridge for up to a week.
Notes
For a softer bite, let them sit at room temperature for a few minutes before eating. You can also freeze them for longer storage and enjoy straight from the freezer.
