Ingredients

  • 1-2 tablespoons olive oil Good-quality extra virgin preferred
  • 3 cloves garlic Minced finely
  • 4 cups broccoli florets Fresh and bright green
  • 2 tablespoons lemon juice Freshly squeezed
  • to taste flaky sea salt Optional for finishing
  • pinch red pepper flakes Optional for a touch of heat

Equipment

  • large skillet
  • Knife
  • Spatula or spoon
  • Measuring jug
  • Lid or foil

Method

  1. Heat a large skillet over medium heat and add 1-2 tablespoons of olive oil until shimmering and fragrant.
  2. Add the minced garlic to the skillet and sauté for about 30 seconds until it becomes fragrant and slightly golden, taking care not to burn it.
  3. Pour in the broccoli florets and stir well to coat them evenly with the garlic and oil. Cook for 3-4 minutes, stirring occasionally, until the broccoli turns bright green and starts to char slightly at the edges.
  4. Pour in 2 tablespoons of freshly squeezed lemon juice and cover the skillet with a lid or foil. Steam for 2 minutes, allowing the broccoli to become tender yet still crisp.
  5. Remove the lid, toss the broccoli to coat it evenly with the lemon juice and garlic, and cook for another minute to meld the flavors. The broccoli should be vibrant, with a slight char and a fragrant aroma.
  6. Transfer the broccoli to a serving dish, sprinkle with flaky sea salt and red pepper flakes if desired, and serve immediately while still crisp and bright.
