Ingredients

  • 1 large head head broccoli cut into even florets
  • 4-6 cloves garlic peel and lightly mince
  • 3 tablespoons olive oil good-quality extra virgin
  • to taste sea salt adjust as needed
  • freshly cracked black pepper to taste
  • 1 lemon lemon for juice after roasting
  • optional pinch chili flakes for heat, optional

Equipment

  • baking sheet
  • parchment paper
  • Small bowl
  • Tongs or spatula
  • Lemon squeezer or juicer

Method

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Wash the broccoli and cut into evenly sized florets, then pat them dry thoroughly to ensure crisp roasting.
  3. Peel the garlic cloves and lightly mince them to maximize caramelization surface area.
  4. In a small bowl, mix the minced garlic with olive oil, a pinch of sea salt, and freshly cracked black pepper.
  5. Toss the broccoli florets in the garlic oil mixture until they are evenly coated, then spread them out in a single layer on the prepared baking sheet.
  6. Roast the broccoli in the oven for about 20-25 minutes, shaking the pan or turning the florets halfway through until they are golden and slightly charred at the edges.
  7. Keep an eye on the garlic; once it turns soft, jammy, and golden, and the broccoli has a smoky aroma with crispy edges, remove the sheet from the oven.
  8. Squeeze fresh lemon juice over the hot roasted broccoli for a bright, zesty finish, then toss gently to distribute the flavors evenly.
  9. Allow the broccoli to rest for 2 minutes so the flavors meld, then serve immediately, enjoying the crispy, smoky, and tender bits.

Notes

For extra smoky flavor, broil the broccoli for the last 1-2 minutes, but watch carefully to prevent burning. You can add herbs like parsley or thyme after roasting for a fresh touch.
