- Preheat your oven to 200°C (390°F). Place a rimmed baking sheet in the oven as it heats—this helps the sheet get hot for better caramelization.
- Peel the carrots if desired and cut them into 2-inch pieces, making sure they’re roughly the same size so they cook evenly.
- Once the oven is hot, carefully remove the baking sheet and spread the carrots out in a single layer. Drizzle with olive oil, sprinkle with salt and pepper, then toss gently to coat all sides evenly.
- Slide the baking sheet back into the oven and roast for 25-30 minutes. Turn the carrots halfway through to ensure they caramelize evenly and become tender when pierced with a fork.
- Meanwhile, melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently for about 1 minute until fragrant but not browned. Remove from heat and stir in lemon juice if using.
- Once the carrots are deeply caramelized and tender, remove them from the oven and transfer to a mixing bowl. Pour the garlic butter over the hot carrots and toss gently to coat each piece thoroughly.
- Taste and adjust seasoning with more salt, pepper, or lemon juice as desired. Serve immediately, garnished with fresh herbs if you like—these add a bright, herbal note that complements the smoky sweetness.

For extra depth, sprinkle smoked paprika before roasting or add fresh herbs after tossing with garlic butter.
