  • 4 large jalapeños firm, bright green, with tight skins
  • 4 oz full-fat cream cheese softened for easy mixing
  • 1 cup shredded cheddar cheese sharp for tang, or pepper jack for extra heat
  • 2 cloves garlic minced, optional for extra flavor
  • 8 toothpicks toothpicks soak in water if baking to prevent burning

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper or place a wire rack on top.
  2. Slice the jalapeños in half lengthwise and use a spoon to carefully remove seeds and membranes for milder heat, or leave some for extra spice. Set aside.
  3. In a bowl, mix the softened cream cheese with shredded cheddar and minced garlic until smooth and well combined.
  4. Use a spoon to stuff each jalapeño half with the cheese mixture, pressing gently to fill all the way to the edges.
  5. Cut each bacon slice in half, then wrap each stuffed jalapeño with a piece of bacon, securing with a toothpick.
  6. Place the wrapped jalapeños on the prepared baking sheet, spacing them evenly.
  7. Bake in the preheated oven for 20-25 minutes, rotating halfway through, until the bacon is crispy and golden brown.
  8. If desired, broil for an additional 1-2 minutes to enhance crispiness, watching closely to prevent burning.
  9. Remove from the oven, let rest for 5 minutes to allow the cheese to set, then carefully remove toothpicks.
  10. Serve warm, arranged on a platter, and enjoy the smoky, spicy, cheesy bites!
